Keeping with our vow to spice things for our weekend dinners, Hubby and I were at it again!
This time our focus was to include the delights of the last of the summer veggies. Hubby said that was nice but he needed some meat! Always accommodating, we agreed on a superb menu!
First, a Curried Summer Squash Bisque. The color of this soup was spectacular. We love soups. In fact, we could survive on them all fall and winter. This one was light, refreshing, and I have to say… Darn good!
With the bisque, we had a seared steak topped with tomatoes, onions and olives. Hubby decided that it would make an excellent sandwich. Not what the recipe called for, but hey just go with it.
You know, it all turned out amazing! A little Italian wine, a lot of conversation, and wow what an evening!
I am loving this! Cannot wait to do this again.
