I have been listening to Bella Tuscany.  In fact I just finished.  It is the follow up to Under the Tuscany Sun.  I really enjoy the voice of Frances Mayes.   Part southern charm, part empowered woman.  Nice combo.

She was talking about asparagus.  Growing it and eating it.  One of the meals she made from her garden at her home in Italy was an asparagus frittata.  When I heard that, my ears perked up.  I love asparagus and eggs….  So I thought why not?



I just had to try.  Asparagus Frittata with fresh garlic and onions.  Served with a chilled white wine and presto, a dinner for two.  Nice, right?

Now all I need is a place in Italy.  I should really work on that….
