Yes, it has been a long while!!!

I love trying new things.  Sometimes they turn out and sometimes they do not.  This time it was good!

Sicilian- Style Orzo Salad with Walnuts and Raisins

1c orzo

1 1/2 c chickpeas

2 c baby spinach

1 c grape tomatoes, halved

 3 scallions, minced

1/2 c toasted walnut pieces

1/2 c raisins

1/3 c chopped fresh basil leaves

1/3 c pitted olives

 3 large cloves of garlic

 1  shallot, halved

3 tbsp olive oil

2 tbsp white wine vinegar

1/2 tsp sugar

1/2 tsp red pepper flakes

1/2 tsp ground fennel seed

1/2 tsp salt


Cook the orzo in boiling salted water until tender.  Drain and rinse with cold water.  Put in large bowl.  Add chickpeas, spinach, tomatoes, scallions, walnuts, raisins, olives, and basil… Set aside.

In a food processor combine garlic and shallot to a paste.  Add oil, vinegar, sugar, red pepper, fennel, salt, and pepper.  Pour the dressing over the salad and toss.

We loved this!!!  This was a perfect meal and colorful too!
