It seems like a very long time since I have done a cooking post! I am actually pretty excited!
Fresh Tomato, Lentil and Onion Soup
First off, I LOVE looking at soup recipes. Healthy ones. This treasure came from a vegetarian cookbook. This is the time of year that I really crave soup. Crisp temps, leaves falling, sweaters…..
What you need:
2 tsp veggie oil
1 onion, chopped
2 stalks celery chopped
3/4 c red lentils
2 tomatoes, skinned, chopped
3 1/4 c veggie broth
salt & pepper to taste
What to do:
1. Heat oil in saucepan. Add onions, celery. Cook for five minutes. Add lentils.
2. Stir in tomatoes, stock, salt and pepper. Cover and bring to a boil. Simmer for about 20 minutes.
3. When lentils are cooked, purée in food processor. Season again with salt and pepper.
Enjoy! This was so easy and so filling! Great when paired with a hearty red wine. We had a Shiraz!
