How about some Hungarian Goulash??  Hubby spent some time Hungary while he was in the military.  The other day he asked for something hearty and warm.  Hungarian Goulash is what he received!

Let’s start with the ingredients!

Olive Oil

Onions and garlic

Bell peppers and tomato paste

Beef

Lemon juice, caraway seeds, and paprika

Diced potato

Beef  Broth

Saute onions in olive oil until tender.

Add bell pepper, tomato paste and let cook until bell peppers are tender.

Add everything else except potatoes.

Cook for an hour and a half on medium heat.

Add potatoes and cook until potatoes are tender.

Now, the best part!  I served it with homemade wheat bread and a Cabernet Sauvignon.

Hungarian Goulash

2 tablespoons olive oil
2 cups chopped onions
2 tablespoons minced garlic
3 bell peppers, chopped
3 tablespoons tomato paste
1 lb beef, in 1 inch cubes
1/4 teaspoon caraway seed
1 teaspoon paprika
6 cups beef stock
1 tablespoon lemon juice
1 cup potato, peeled and cubes
Heat oil and saute onions until tender.   Add garlic, peppers, and tomato paste.  Cook for about 10 minutes.
Add beef, caraway seed, paprika, beef stock and lemon juice.  Cook for about 1 1/2 hours.  Add potato and simmer until meat and potato are tender.
